How Con Dao almond seed jam is made

Almond season peaks around June and July. When the ripe fruits fall, local residents collect them, sun-dry the seeds, and crack the shells to extract the kernels for making jam. The kernels have a creamy color, a naturally nutty taste, and a pleasant aroma—perfect for creating Con Dao almond jam.

The entire process is 100% handmade, and the jam is typically prepared in three flavors:

  • Sweet (sugar-coated)
  • Salty (salt-roasted)
  • Original (plain roasted, no added seasoning)

Making almond seed jam is extremely labor-intensive. After 4–5 days of sun-drying, each shell must be cracked by hand, and only a small amount of kernels can be collected after hours of work. These kernels are then roasted slowly over low heat and stirred continuously to ensure they remain golden, evenly cooked, and fragrant. Some families add pandan leaves or ginger to enhance the aroma.

The sweet roasted almond jam is considered the most difficult to make because the heat must be controlled precisely for the sugar to dry and coat the kernels evenly. Thanks to its mild sweetness, nutty aroma, and non-greasy texture, Con Dao almond jam is loved by visitors of all ages.

Why Con Dao almond seed jam is special

Because the kernels are hand-extracted and roasting is done in small batches, the price typically ranges from 320,000 to 400,000 VND per kilogram, depending on the season. Today, almond seed jam is neatly packaged in vacuum-sealed bags or plastic jars (200g–1kg), making it an ideal souvenir.

Many visitors return to Con Dao and always choose this product as a gift—some even receive requests from friends and colleagues to bring back almond jam because of its unique flavor that cannot be found elsewhere.
