Discover Con Dao’s Signature Treat: Roasted Tropical Almonds (Mứt Hạt Bàng)

When visiting Con Dao, besides indulging in fresh seafood and island delicacies, travelers are often treated to a unique specialty found nowhere else: mứt hạt bàng, or roasted tropical almonds. This local treat comes in two flavors — sweet and savory — and despite being called “mứt” (jam), it is simply tropical almond kernels roasted with sugar or salt.

Though rustic and simple, mứt hạt bàng requires a great deal of effort to collect and prepare. The nuts are only plentiful during the fruiting season, around June and July, so this specialty is considered quite precious. In Con Dao, prices typically range from 450,000 to 500,000 VND per kilogram, and can be higher once brought to major cities. Even so, for food lovers, these roasted almonds are an irresistible island snack — fragrant, wholesome, and addictive.

A Simple Treat with an Unforgettable Flavor

Among the two varieties, many prefer the salt-roasted almonds because they retain the nut’s natural richness and nutty aroma. The kernels look plump with a slightly brown shell. When bitten into, you can see tightly layered ivory-white flesh inside, beautifully arranged like rings.

To make a single batch of quality roasted almonds, the maker may spend an entire day working. When the fruits fall during peak season, locals head out early in the morning to gather them. The nuts must be sun-dried repeatedly until the shells become brittle enough for processing.

Cracking the nuts requires skill — the knife must not cut too deep, or the kernel inside will break. Most of the work is done by hand to ensure the full shape of the nut is kept intact.

Fresh kernels have a natural brown, wood-like color. From here, they can be turned into two types of treats: salt-roasted or ginger-caramelized.

Salt-Roasted Almonds – simple yet irresistible

This version is made by pan-roasting the kernels with just enough salt to create a light savory crust. Though simple, the process must be done carefully to avoid burning and to preserve the nut’s natural sweetness and crunch.

Ginger-Caramelized Almonds – aromatic and more elaborate

This method is more time-consuming. Sugar is simmered with water and julienned ginger, then the nuts are tossed into the mixture and stirred quickly so they don’t clump together. Once coated with a glossy amber caramel, an additional thin layer of sugar is added for a beautiful finish.
