Enjoying the Queen Crab of Con Dao

The Queen Crab of Con Dao is a rare delicacy, caught alive in small quantities by local fishermen and therefore not commonly available in most seafood restaurants. Yet with its sweet, firm meat, rich creamy roe, striking appearance, and vibrant red color, this crab has become an irresistible favorite for many visitors to the island.

Queen crabs have thick, hard shells and a naturally bright red body, with two large claws that are uniquely glossy black.
They live in the wild among coral reefs around Con Dao, and the largest ones can weigh more than 1 kilogram. The charming names “Queen Crab” and “Royal Crab” were given by local fishermen because of the crab’s beautiful color and elegant appearance.

Despite the red shell, the meat inside is white, firm, fragrant, and naturally sweet. The roe is soft, buttery, and rich in flavor. The only drawback is that the crab has relatively little meat and a tough shell—but what it lacks in quantity, it more than makes up for in taste.

The best way to enjoy Queen Crab is tamarind stir-fried or sweet-and-sour sauce stir-fried, rather than steamed.
When the rich, creamy roe blends with the tangy, flavorful sauce, it creates a uniquely delicious combination that keeps diners coming back for more.
