Savoring the Flavor of Côn Đảo Slipper Lobster (Tôm Mũ Ni)

Slipper lobster, known in Vietnam as tôm mũ ni, is considered one of the finest seafood specialties of Côn Đảo. Many visitors say that once they taste it, they instantly fall in love—so much that they “forget the way home” after their spiritual journey across this sacred island.

A unique species of Côn Đảo’s waters

Slipper lobsters are found in several coastal regions of Vietnam, but Côn Đảo is renowned for producing the best quality. The name “tôm mũ ni” (literally “wool hat lobster”) comes from their broad, flat head that resembles a traditional ear-covering cap. Locals also call them tôm vỗ, because when caught, the tail fans out and slaps strongly against the body—often startling the person holding it.

There are several varieties, but the two most common are:

  • White slipper lobster
  • Red slipper lobster – the rarest and most valuable

Slipper lobsters typically live in shallow waters among coral reefs. During the day, they hide under sand or inside rock crevices; at night, they emerge to feed—also the ideal time for fishermen to catch them.

Where and how to enjoy slipper lobster in Côn Đảo

The most authentic way to enjoy this delicacy is to take a boat out to the offshore fish farms, where freshly caught slipper lobsters are kept alive. Visitors can choose their lobster and have it cooked on the spot.
You can also buy them at Côn Đảo Market, or enjoy ready-to-eat dishes at reputable seafood restaurants such as Tuấn Biển Nam Định, Tri Kỷ, Thu Ba, Phương Hạnh, and others.

Exceptional taste and nutritional value

Among all varieties, red slipper lobster is the most expensive, priced from 2–3 million VND per kilogram, even higher than lobster of the same size. White slipper lobster is more affordable, 700,000 – 1,000,000 VND per kilogram at local restaurants.

Although the shell is thick and heavy—meaning the meat makes up only one-third to half of the body weight—the quality is outstanding:

  • Naturally sweet
  • Tender yet firm
  • Mildly aromatic
  • Snow-white in color
  • Rich and satisfying without feeling heavy

Many seafood lovers claim that slipper lobster meat is more flavorful and nutritious than regular lobster.

Popular dishes made with slipper lobster

Slipper lobster can be prepared in many ways:

  • Grilled over charcoal (best and most popular)
  • Grilled with chili salt
  • Grilled with satay
  • Grilled with garlic butter
  • Baked with cheese
  • Steamed with beer
  • Simply steamed to preserve its natural sweetness

The most celebrated dish is grilled slipper lobster. Place the fresh lobster over glowing charcoal, wait until it releases a mouthwatering aroma, then crack open the shell. Inside is the gleaming white, firm meat—best enjoyed with lime-salt-pepper dipping sauce.

A rare treat of the island

Slipper lobster in Côn Đảo is still entirely wild-caught, as the species cannot be farmed. Limited supply makes it even more sought-after by visitors who want to enjoy the true flavor of the island.
