Young Garlic Salad – A Rustic and Nutritious Specialty of Ly Son Island

Towards the end of the lunar year, when the young garlic season begins to peak, the people of Ly Son Island start harvesting early young garlic plants—not to sell, but to prepare the island’s beloved specialty: Young Garlic Salad. This rustic dish is not only delicious but also highly nutritious, reflecting the unique culinary culture of Ly Son, the “kingdom of garlic.”

After being pulled from the soil, the young garlic stalks are washed clean, with the leaves and roots removed. The stems are then split into two or three pieces and lightly steamed until just tender, preserving their natural sweetness and crispness.

The salad mixture includes:

  • fragrant fried shallots
  • roasted peanuts, coarsely crushed
  • a touch of sugar and seasoning
  • high-quality fish sauce
  • sliced fresh chili

All ingredients are gently mixed with the steamed young garlic, and finally topped with a spoonful of crispy fried shallots.
