Lăng Cô, in Phú Lộc, is known not only for its beautiful sandy beach but also for its abundant seafood, including shrimp, crabs, fish and other local products from the lagoon. From Lăng Cô Clams to a Traditional Specialty
The clam, locally known as “sặc,” is a familiar product of Lăng Cô Lagoon. Unlike many other types of seafood that are commonly enjoyed fresh, clams are particularly valued here as the main ingredient for making the region’s famous fermented clam paste.
The preparation is relatively simple but requires several careful steps. The clams are removed from their shells, washed thoroughly to remove sand and then drained for about 50 minutes. They are placed in a clean container and mixed with finely ground salt at a ratio of approximately 10 cups of clams to 2 cups of salt. Chili and galangal are then added, and everything is mixed thoroughly before being placed in a bottle or plastic container and sealed tightly.
After approximately 8 to 10 days, the paste is ready to eat. Once fermented, the clam solids gradually rise to the top, while the liquid underneath becomes cloudy and resembles fish sauce in color. According to local experience, the higher the clams rise and the more liquid accumulates underneath, the longer the paste has been fermented.
The Distinctive Flavor of Lăng Cô Clam Paste
When served, an appropriate amount of clam paste is taken from the container and mixed with freshly crushed garlic. Depending on personal taste, a little sugar or seasoning powder can be added to adjust the flavor.
Lăng Cô clam paste is especially good with steaming hot rice, or it can be used as a dipping sauce for boiled pork belly and fresh vegetables. Its flavor brings together spiciness, sourness, saltiness and sweetness, creating a rich combination that is characteristic of this traditional local condiment.
Simple in both ingredients and preparation, clam paste leaves a strong and memorable impression through its distinctive flavor.
