If you visit Huế in the summer, bún giấm nuốc is a distinctive local dish worth trying. This seasonal specialty is closely associated with the brackish lagoons of Huế and is traditionally available during the summer months, when nuốc is in season.

Nuốc, a Summer Delicacy from Huế’s Lagoons

Nuốc is the local name for a small, legless aquatic mollusk that appears in abundance during the summer in the brackish lagoon areas of Huế. It belongs to the same family as jellyfish but is much smaller, measuring roughly half the size of a lemon.

During the nuốc season, fishermen harvest the creatures, keep them in water and bring them to local markets. Nuốc is generally divided into two parts: the ear and the legs. The ear can be served with fresh vegetables and fermented shrimp paste or prepared as a salad. The leg, with its crunchy and slightly chewy texture, is the part traditionally used as the main ingredient in bún giấm nuốc.

The nuốc legs are soaked in cold water with guava leaves to help maintain their crisp texture. Before serving, they are removed from the water and thoroughly drained. According to the traditional preparation, the better drained the nuốc, the crunchier it becomes.

The Flavorful Broth of Bún Giấm Nuốc

One of the most important elements of bún giấm nuốc is its broth. The shrimp are peeled while keeping the roe, then marinated with onion, pepper, fish sauce and salt. They are gently cooked with cooking oil over low heat so that the seasonings penetrate the shrimp before a small amount of water is added.

Fermented shrimp paste is then added for depth of flavor, followed by tomatoes, which provide a natural sourness. The broth is brought to a boil and then removed from the heat.

The dish is served with a variety of fresh vegetables and toppings. These include aromatic herbs and, most importantly, finely shredded Sứ banana blossom. Roasted peanuts, sesame rice crackers, fermented shrimp paste and green chili are also added to enhance the flavor and texture.

How to Enjoy Bún Giấm Nuốc

To serve the dish, fresh vegetables are placed in the bowl first, followed by rice vermicelli and enough broth to cover the ingredients. Chopped scallions, herbs, peanuts and fermented shrimp paste are then added. The nuốc is placed in last, together with pieces of sesame rice cracker.

A bowl of bún giấm nuốc brings together contrasting flavors and textures: the rich, warm broth; the freshness of rice vermicelli and vegetables; the nuttiness of peanuts and sesame crackers; and the crisp, slightly chewy texture and subtle sweetness of nuốc.
